Chocolate Chia Mousse



We sure do love pudding once in a while.
Have you ever took a peak at the ingredients in the store bought brands? Even the ones you add your own milk to? They are loaded with sugar, gluten and other things I cannot even pronounce!

So, naturally I thought about a way to make this treat a bit healthier.
1 1/4 cup unsweetened non-dairy milk (almond or coconut are my personal favs)
1/4 cup chia seeds
3 tablespoons raw cacao powder (baking cocoa will also work) 
* for a complete meal, add 2 scoops chocolate Shaklee Life Protein instead of cocoa powder
Dash of pink Himalayan sea salt
1 tablespoon organic maple syrup or raw honey
Dark Chocolate shavings for garnish

Directions:
Mix it all together and store in fridge to thicken. The chia seeds naturally become gelatinous making it like a "pudding".

The addition of the protein added extra protein & leucine to the treat. Proteim to keep my blood sugar levels normal and the leucine helps to retain muscle mass.
EAT PUDDING, KEEP MUSCLE?
Um, yes please!

I used my kitchen aid mixer, but this can easily be mixed with a spoon in a bowl.


It may see, very water at first, it may take hours or even over night to thicken, so make ahead of time.


The use of cute dessert dishes and whipped topping makes this even better!
