It's no secret at family get togethers that my Granny's potato salad is the best and no one can compare! True story: we planned a surprise 75th birthday party for her and my Aunt had her make potato salad because Granny thought she was going to a birthday cookout of a friend of my Aunts.
Ha! can you believe we tricked her into making potato salad for her birthday?
Yes, we are horrible, but man that was some good stuff.
Here is the thing about her famous potato salad, it is loaded with sugar and made with white potatoes which are very high in starch with very little nutritional value.
I am so so excited that this recipe turned out so awesome, just like hers…okay not exactly but ALMOSt like hers. This is a potato salad that will trick anyone!

"Almost" Granny's Potato Salad
1 large ( about 1 pound) white-flesh Japanese sweet potato, peeled & cubed1/3 cup mayo or thick greek yogurt
Juice of 1/2 lemon
1 teaspoon dijon mustard (we used Trader Joe's brand)
1/2 teaspoon salt (or more to taste)
1/2 teaspoon dried dill
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
4 hardboiled eggs, peeled and chopped
2-3 stalks celery, minced
2 Tablespoons chives, minced
1-2 Tablespoons green onion
1. Boil sweet potatoes until fork-tender, about 11 minutes. Drain and set aside to cool in large bowl or pot.2. In a separate bowl whisk together the mayonnaise, lemon juice, dijon mustard, salt, dill, garlic powder, onion powder and black pepper.
3. Add the mayo mixture to the cooled potatoes and mix well. Gently stir in the hardboiled eggs, celery, chives and green onion.
4. Chill in the refrigerator until ready to serve. Keeps for up to 5 days.
