2½ cups quinoa crispies (I found mine at MoM's)
¼ teaspoon salt
½ cup peanut butter
½ cup raw honey (I use local honey!)
4 oz dark chocolate
Mix the quinoa crispies and salt together in a large mixing bowl and set aside. Line a square baking dish (8x8 for thick bars or 9x13 for thin bars) with parchment paper or spread coconut oil in the pan.
In a small sauce pan, heat the peanut butter and honey together. Stir until its liquidy and easy to pour. Pour it over the quinoa mixture and stir with a wooden spoon until everything is combined.
Transfer the mixture to your prepared baking dish, and flatten with the spoon.
Place in the refrigerator while you melt the chocolate.
Melt the chocolate over a double boiler (or be lazy and melt 40 seconds at a time in the microwave!), pour melted chocolate one the bars.
Return the dish to the fridge and until cool and the chocolate has completely hardened.
They are ready to eat once chocolate is hardened!
(or as soon as you spread the chocolate one them because you are impatient and craving something sweet!! LoL)
