Tortellini Soup

Tortellini Soup

(I used a stock photo from the web because my pics were not coming out very well, I have already asked Santa for a NEW camera so that I can stop using my iPhone as my camera)

I received this recipe in an email from one of my local daycare provider associations and just had to try it out, I tweaked it just bait to fit the things I enjoy best, take crack at it and tell me what you think?  By the way, my kids just loved it, it's GONE!

Makes: 10 to 12 servings
Prep 10 mins Cook 8 hrs to 10 hrs  (low) or 4 to 5 hours (high)

Sausage and Tortellini Soup

2 14 1/2 ounce cans Italian-style stewed tomatoes, undrained 
*(I cut up organic cherry tomatoes instead and used some canned Trader Joes Tuscan tomato sauce)
3 cups water
*(I always use water filtered with the Get Clean pitcher!)
2 cups frozen cut green beans or Italian green beans
*(I opted for the fresh italian green beans, took longer to cook)
1 10 1/2 ounce can condensed French onion soup
8 ounces cooked smoked turkey sausage, halved lengthwise and cut into 1/2inch pieces
2 cups packaged shredded cabbage with carrot (coleslaw mix)
*(I cut the carrots & cabbage from fresh instead, but this is a great quick option for a quick mid-week meal)
1 9 ounce package refrigerated cheese-filled tortellini
Shaved Parmesan cheese (optional)
 *Optional: Add other begins such as zucchini, squash, corn or other variety of beans/peas.
1. In a 4- to 5-quart slow cooker combine tomatoes, the water, green beans, soup, and sausage.
2. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
3. If using low-heat setting, turn to high-heat setting. Stir in cabbage and tortellini. Cover and cook for 15 minutes more. If desired, top each serving with Parmesan cheese.
